π BBQ Cheese-Stuffed Grilled Meatloaf with Chipotle Glaze
Ingredients:
For the Meatloaf:

2 lbs (900g) ground beef (80/20 blend is ideal)

1/2 lb (225g) ground pork (optional for extra flavor and juiciness)

1 small onion, finely diced

3 garlic cloves, minced
-
1 cup breadcrumbs (panko or regular)

2 large eggs
-
1/3 cup milk
-
1/4 cup ketchup
-
2 tbsp Worcestershire sauce
-
1 tsp salt
-
1/2 tsp black pepper
-
1 tsp smoked paprika
-
1 tsp ground cumin (for a bit of warmth)

1 1/2 cups shredded cheese (cheddar or mozzarella works well)
For the Chipotle Glaze:

1/4 cup ketchup
-
2 tbsp brown sugar
-
1 tbsp apple cider vinegar
-
1–2 tbsp adobo sauce (from a can of chipotle peppers)

1/2 tsp smoked paprika
-
1/4 tsp ground chipotle pepper (for extra smokiness)
Instructions:

Preheat the Grill:
Set the grill up for indirect heat (one side medium-high, one side off) to around 350°F (175°C). Add some wood chips to the coals for extra smoky flavor, if you have them! -
Prepare the meatloaf mixture:
In a large bowl, mix all the meatloaf ingredients (except the cheese) until just combined. Be careful not to overwork the meat — you want a tender loaf. -
Stuff with cheese:
Take about 1/3 of the meatloaf mixture and form it into a flat patty. Place shredded cheese in the middle, then cover with the remaining mixture. Form into a loaf shape (about 8x4 inches) ensuring the cheese is sealed inside. -
Grill the meatloaf:
Place the loaf on the grill over indirect heat. Close the lid and cook for 45–60 minutes, or until the internal temperature reaches 160°F (71°C). -
Make the chipotle glaze:
While the meatloaf is grilling, mix together all the glaze ingredients in a bowl. Adjust the chipotle level to your taste by adding more adobo sauce or ground chipotle for heat. -
Glaze the meatloaf:
In the last 15–20 minutes of cooking, brush the meatloaf with the chipotle glaze every 5 minutes to build up layers of flavor and a nice sticky coating. -
Rest & serve:
Once done, remove the meatloaf from the grill and let it rest for 10 minutes. Slice carefully so you get that melty cheese goodness in every bite.

If you want extra cheesy goodness, sprinkle shredded cheese over the top of the loaf in the last 5 minutes of grilling and let it melt.

Try adding a few sliced jalapeños to the meat mixture if you like a spicy kick.
