π Grilled Meatloaf Recipe
Ingredients:
For the Meatloaf:

2 lbs (900g) ground beef (80/20 blend is ideal)

1/2 lb (225g) ground pork (optional for extra flavor and juiciness)

1 small onion, finely diced

3 garlic cloves, minced
-
3/4 cup breadcrumbs (panko or regular)

2 large eggs
-
1/3 cup milk
-
1/4 cup ketchup
-
2 tbsp Worcestershire sauce
-
1 tsp salt
-
1/2 tsp black pepper
-
1 tsp smoked paprika (optional for smoky flavor)
For the Glaze:

1/4 cup ketchup

2 tbsp brown sugar
-
1 tbsp apple cider vinegar or mustard (adds a tangy kick)
Instructions:

Preheat Grill:
Set grill for indirect heat (one side on medium-high, one side off) to about 350–375°F (175–190°C). Lightly oil the grates. -
Make the meatloaf mixture:
In a large bowl, combine all meatloaf ingredients. Mix gently with your hands or a spoon until just combined (don’t overmix). -
Shape the loaf:
Form the mixture into a free-form loaf shape (about 8x4 inches) on a piece of heavy-duty aluminum foil or a grill-safe baking tray. You can also use a grill-safe loaf pan, but forming it freehand gives you more smoke and crust. -
Grill the meatloaf:
Place the loaf over the indirect heat zone. Close the lid and cook for 45–60 minutes, or until the internal temperature reaches 160°F (71°C). -
Add glaze:
Mix glaze ingredients and brush over the top of the loaf during the last 15–20 minutes of cooking. You can glaze twice for a thicker layer. -
Rest & slice:
Remove from grill and let rest for 10 minutes before slicing. This keeps it juicy and easier to cut.
