-
1 zucchini (optional), sliced thick

3 tbsp soy sauce
-
2 tbsp Worcestershire sauce
-
1 tbsp balsamic vinegar or red wine vinegar
-
2 cloves garlic, minced
-
1 tsp dried oregano
-
1 tsp black pepper
-
1/2 tsp salt
-
1 tbsp brown sugar or honey (optional, for a hint of sweetness)
Instructions:
-
Soak skewers (if using wooden): Submerge in water for at least 30 minutes to prevent burning.
-
Make the marinade:
In a bowl, whisk together all marinade ingredients. -
Marinate steak:
Place steak cubes in a zip-top bag or bowl. Pour marinade over, seal, and refrigerate for at least 1 hour (ideally 4–6 hours). -
Preheat grill:
Heat grill to medium-high (around 400°F/200°C). -
Assemble kabobs:
Thread steak and vegetables alternately onto skewers. Leave a little space between pieces for even cooking. -
Grill:
Place kabobs on grill. Cook for 8–12 minutes, turning every few minutes, until steak reaches your desired doneness:-
Medium-rare: 130–135°F (54–57°C)
-
Medium: 140–145°F (60–63°C)
-
-
Rest & serve:
Let kabobs rest 5 minutes before serving. Serve with rice, grilled flatbread, or a fresh salad.
💡 Tips:
-
You can add mushrooms, cherry tomatoes, or pineapple for variation.
-
Marinate veggies separately if you prefer them less seasoned.
-
Want extra sauce? Double the marinade and set aside half before marinating for basting or dipping (don’t reuse the marinade from raw meat).
